So, earlier, I mentioned that Chris and I are travelling to Outer Banks? That trip was nixed as soon as I realized that San Juan, Puerto Rico would cost roughly the same! So, we reserved everything on Friday. I am so very excited. I am trying to figure out everything (travel is an issue once we are on the island). It's been years since I have been on a real vacation.

Well, I booked a cottage in the Outer Banks! I am so very excited to take a proper vacation with my mister. So, so excited! We decided on the Outer Banks because it's relatively close (as far as beaches go), neither one of us has ever been & it's rich in history. Now, to find things to do while we are there. So far, I am thinking that we will go on a sailing cruise. Other than that? No clue. I am on the hunt right now.

We had company, all last week, because of the power outages. Chris' friend was here all day, Saturday. I took some food to a friend whose family was cooped up in a hotel room that night. Sunday morning, A* texted and asked ever so politely if she could stay with us. She did not really get in the way, whatsoever. She even got my car inspected, filled its gas tank, and cleaned it out! Yay! It's so nice to have the house back though. Last weekend, Chris and I did absolutely nothing. Nothing. It was great.

Soon, we have a family reunion to attend (his side). I found out that my family has planned a reunion for Labor Day weekend. However, Chris and I have already scheduled our vacation.

As for the power outage, one coworker has not had power since 6/29. He had just come back from a camping trip where they did not have power. They do have a generator but did not have any A/C. It's been near or above 100 degrees for days now. Even more unfortunate, he is one of two people in his entire city without power so I am sure they will be one of the last people to get power restored. Supposedly, everyone should have power by tomorrow.

We were supposed to go to Columbus for the day, possibly overnight but I didn't feel so well this morning. Since I had no idea how I would feel the majority of the day, it's been postponed. Instead, I picked up breakfast and we decided to go to Sam's Club and to the Capitol Market. We've done this, the past few Saturdays and I have come to really enjoy these outings with my husband. Awwww /mush

We hit the seafood market/shop so it looks like we will have grilled cod and shrimp for dinner. I guess I will make some kind of potato dish. I'll figure it out some time today. Oh! Picked up the most amazing scented strawberries ever and a watermelon. Nom.

Last weekend, I made: Awesome stuffed shells and a strawberry cake. The guys and my dad loved it! While I like cheese stuffed shells, I really liked this dish.

Apparently, Saturdays are my days to make big meals. I made Loaded Potato Buffalo Chicken casserole and I think this is the guys' favorite dish now.

We celebrated my niece's birthday on Thursday and aside from the usual agitations, it was a nice dinner. Yesterday, we picked up some new-to-us sofas. We scored a great deal since the sofas have mainly been in storage for a while and are in near new condition. We've been going back and forth about sofas for a few months now but nothing at the stores really wowed me. I found the used ones online and I asked Chris what he thought - they were the right color, style, and comfort! Now, we just need a new refrigerator and that's pretty much it for the house.

I had surgery last week. It wasn't anything major but after the experience I had with a surgery in August, I seriously did not want to go through it again. Then, I woke up with an excruciating headache and I was very emotional. They told me it was a "caffeine headache". No, I know what that feels like. I could not eat that day. I could only handle chicken broth so I could take my medication.

This time around? I felt like a million bucks coming out of surgery! I was still groggy and such but no headache or anything. I thanked the anesthesiologist, several times. I was even able to handle some rice and soup with noodles!

I had a couple days off from work, for the surgery. By Monday, I was getting stir crazy.

Life is good. Chris heard some good news recently. More on that later. Oh, he got his iPad on Friday! He's been saving Best Buy gift cards for the iPad 3 release, so I am sure he's glad he waited. I am ever-so-slightly jealous of the iPad 3. Compare to my Kindle Fire? My Kindle Fire is little more than a paperweight. Hah!

Oh, I started watching GCB. OMG, I <3 that show! It just makes me laugh and laugh!

I am trying to be healthier and last night I made a mostly healthy fruit salad. It was the best fruit salad ever!

Mixed 1 box cream cheese (this was full fat because that's what I had) with 1 can of sweetened condensed milk (fat free) then fold in one container of cool whip (fat free). Mix with fruit(s) of your choice! I only used about a 1/3 of the mixture even though I hate wasting food. I mixed it with fresh strawberries, blueberries, bananas, canned pineapple chunks in its juice, and canned mandarin oranges. I am obsessed with the stuff now!

When my maternal grandma was sick, my mom was at the hospital a lot with her. Since my sister and I were in junior high/high school, we just stayed home with my dad. Since I had a growing interest in cooking, I wanted to make him his favorite - a cheesecake so I asked him to pick up a mixer:

I really should update more often but, really, life is life. We went to Pocahontas County for our one year anniversary. It was great!

Day One: Arrived to the "cabin" and was surprised to see it wasn't actually a cabin but more like a condo. It was on the river, so that won some points. To our dismay, the only "grill" was a fire pit outside. We brought some filet mignons & bacon with hopes of grilled bacon wrapped filet mignon. We were out in the middle of nowhere. Seriously. It was an hour drive to any real semblance to a grocery store so the owner pointed us toward a general store. It has been years since I have been inside a general store (hardware/gas/various groceries/meat counter/etc). The groceries were about twice the price of Kroger or Wal*Mart but we learned they sold ribeyes at almost 1/2 the price of a grocery store. Since they cut the steaks there, I assume they were purchased from a local farmer. Oh, yeah - TONS of farms out that way. We bought a few of those and had dinner in the cabin. I pan grilled the steaks and served a corn dish, mashed potatoes, and garlic bread. We had a very very nice night :)

Day Two: We woke up rather early and I made bacon & eggs for breakfast. Chris wanted to check out the Green Bank Telescope so we found that they offer tours all year. Oh, yeah. We exchanged gifts, too, that morning! I gave Chris a personalized valet from Things Remembered & a card to Best Buy (holding out until the iPad 3 is released) and he gave me a Kindle Fire! Yay! I <3 it so much! He's pretty cool too :P

We headed out to Green Bank, WV and had a light lunch in the observatory. We wondered around the gift shop and such before our tour started. I must say, it was a really nice excursion. The weather was beautiful!!! And telescopes are just awesome when they are freakin' huge!

We tried to find a nice restaurant but despite the glowing reviews on Google/Yelp, the "restaurants" are either country fried places or a sandwich shop in a general store. Since neither appealed to us, we stopped at the general store and bought hamburgers. Seriously, I think they only sold beef. Regardless, it was fresh ground beef and made the most amazing hamburgers I have eaten in my life. I am not a hamburger fan and usually like a ton of veggies on my burgers to disguise the beef a bit. With the fresh hamburger, I was just fine with cheese and mayo on it. The veggies were a bit questionable at the general store. We topped off dinner with a piece of our wedding cake. Since the topper was so large, we had to throw away the rest but it held up for a year in the freezer! We had another nice night despite the horrible movie, Drive.

Day 3: We left relatively early & stopped for breakfast at Bob Evans in Lewisburg. Yes, we had to drive an hour to find any kind of restaurant that serves breakfast and to get a cell signal.

In sum, I had a great time with my wonderful husband. I love when our relationship feels renewed and we desperately needed the getaway. I do wish I took more pictures but I just didn't really think about it.

Lesson Learned from Cabin Stays: DO NOT plan on having a nice dinner out on the town because cabins are usually in the middle of nowhere. DO NOT rely on reviews from Google/Yelp/etc.

Since we are replacing the built in microwave, we are finally painting the nasty kitchen. By nasty, I mean we are painting over the blood red and brown. The last owner was lazy and just painted around appliances and such.

Since we bought the paint a while ago, I completely forgot that I went with a rather dark green and cream. While painting, I was unsure of the decision but now that the painter's tape has been removed from the intricate wood trim/chair rails, I <3 it so much.

It reminds me of a hunter's lodge/cabin so I will keep with a rustic theme in the kitchen.

Kitchens are a P-I-T-A to paint, by the way. I am going to get rid of a bunch of stuff I don't use, too. I should wait to have a yard sale but I don't know. It's just cluttering up my cabinet tops.

Managed to clean up the house a bit, will do some more tomorrow. I made the breakfast casserole for tomorrow morning and, on a whim, decided to invite my dad over for breakfast and he accepted! Yay! So, I will probably serve cinnamon rolls and maybe fry up a bit of bacon with breakfast.

The pig cake/sunshine cake or the yellow cake with mandarin oranges/pineapple frosting is made. I fixed the onions & celery for the dressing. Tomorrow, I will just need to make the ham, dressing, mashed potatoes & green beans. Yeah, since I go big on Thanksgiving and I am in charge of Christmas dinner (for various reasons), I go much more low key. Also, it's just Chris, my dad, my sister, her kids, and possibly the goof.

Since, Chris "stumbled" upon the packing slip for two of his gifts, I made him open them today. I think the WoW coffee mugs were a hit! I really hope he likes the rest of his gifts.

I cannot wait to make my year in review post!

I am also excited for our trip to NC. Chris requested that I make another batch of rugelach to take with us. Yes, he was actually impressed with it.

I am procrastinating. I really should be cleaning in preparation of our dinner tomorrow. Who knows if my sister will show up.

Whatever. I need to focus on the holidays and be in the holiday spirit.

This week, I made a TON of goodies:
peanut butter fudge
turtles on a pretzel
oreo truffles (fyi, these turn out so much better if you have a food processor which I did not a few years ago and I also hand rolled them in chocolate - so much easier and faster than dunking)
buffalo chicken dip

Right now, I really need to clean and make the orange cake/whatever you want to call it. I am making that because my sister requested it & my nephew adores it.

I am so burnt out on sweets. I bought a big bag of white chocolate covered pretzels from the boy scouts and then my friend gave me a huge thing of chocolate covered pretzels. o.m.g I am done with chocolate covered pretzels. I am done with chocolate until June, I think.

This weekend was rather busy. Friday, I went out to dinner with several coworkers and our SOs. Oh my, we had such a blast! Our "clique" is such a hilarious bunch! Chris was rather reluctant to go despite the awesome things I have had to say about them. Needless to say, 2 1/2 hours later, he agreed that they are an amazing bunch of people!

Saturday, we both goofed around all day. Saturday evening, I made chili & rugelach. I have never made rugelach and it's awesome! I don't have anything to compare it to but it's amazing. Sunday, I made a casserole for breakfast then Chris started to feel ill (hence my earlier post). 24 hours later and he's almost back to normal. He did not eat anything today until dinner when I made him some Ramen. That even upset his stomach. My poor guy.

I took in the huge pot chili into work today. It was eaten. I received compliments. :D

I made more rugelach tonight, so I plan on taking that to work tomorrow. Friday, C* and I plan on bringing some things to munch on since it's our last day before Christmas and there will just be a few people there.

All my Christmas shopping is done! Yay! I have to pick up one thing for Chris and I am done so I guess it's not quite finished? Anyway, I hope to have Christmas dinner on Christmas day but I am anxiously waiting for my sister to cause some kind of issue that day. Whatever.

Tomorrow, I am taking my nephew to his one month late birthday dinner. Poor guy didn't have a proper birthday party or anything. He did get a cool gift but I finally have a little bit of free time so I told him I will take him for his steak dinner. Oh! He asked me what his sister was getting for Christmas and I told him "rocks and dirt". Well, he told his sister that and a drama fit ensued. Buahahaha!

Soon after Christmas, Chris and I will probably go visit his dad and sister. He suggested that I take a batch of rugelach with us. Yes, it's that awesome.

I hate straightening up the house. I loathe it. Why? Because I am not a good organizer. However, I love deep cleaning. I probably wipe down the cabinets more often than is necessary. I just adore the smell of cleaning supplies & knowing that everything is clean.

Does that mean the house is always clean? Absolutely not. Working 40 hours a week & taking online courses means I have even more reason to procrastinate the cleaning.

I want to make awesome gift tags for Christmas gifts. It's taking everything I have to not spend a gazillion dollars on this project.

What else is new? I guess not much. Oh! I decided that I like Johnny Cash. As I said on my FB post, "this chick has some variety!"

Well, it's been a few days since I last updated. Chris and I decided to chalk it up and get a new car. My car was near 20 years old, 180k miles, and I just needed to upgrade. My old car, while not a beauty in its last years, was a great and wonderful vehicle. I bought the car in 2003 and for the $5500 I paid, it was well worth the price.

Monday, we are traveling up north for a meetup of fellow gamers so that will be interesting. I took it upon myself to bring food to the cause. Monday, I plan on bringing 7 layer bars & and a mango/ginger cheeseball. Yum! The following weekend, we will be there for the entire weekend. Fun times ahead!

Oh! We preordered the iPhone 4s! I will be happy to upgrade from my Samsung Rogue. It's a great phone but it's not a smart phone. Chris will probably stomp his Droid to pieces when he gets his new phone.

I have already managed to get a bit of birthday and Christmas shopping done. Yay! His nephew and my nephew nearly share the same birthday (just a day apart). I bought my nephew several National Geographic Kids books. His quite an inquisitive child (and very smart too!). We bought his nephew a Cars lego set. While at Sam's Club, I saw a Barbie art set that is just wicked cool. Even Chris was impressed! It was very cheap but so impressive that I probably will not buy her anything else. For my dad, I bought him some nice slippers.

So, that just leaves all the nephews (3 in total), Chris' sister, his dad, and his mom. Oh and we also bought a Christmas tree last January so we will have a tree this year! Until this year, our "tree" was a ceramic one that Chris' great aunt made.

Since downloading the kindle app, I have been reading so much more! I had no idea how much more convenient it is. I just finished up The Help which I adored and the Hunger Games trilogy which was a fast but dark set of books. If anyone might want to borrow Hunger Games and has the Kindle or a Kindle app, I can lend those. I don't think I can lend any of my other purchases though.
